Roasted Oysters

My 8-year old son wolfed down a half dozen of these last night, then drank the sauce out of the shells and off the plate and demanded more. Must be good. And it's simple.

Live oysters, shells scrubbed
Extra virgin olive oil
Limes
Tapatio or your favorite hot sauce

Roast the oysters over medium heat in a covered gas grill or using indirect heating in a covered charcoal grill for 5 to 10 minutes, just until the shells open. You'll here a pop when it happens. Using tongs (they're frickin hot) and taking care not to spill the oyster liquor, remove the oysters from grill and remove the top halves of their shells. Place on a serving plate, drizzle with a few drops of olive oil, a squeeze of lime juice, and a drop or two to taste of the hot sauce.

My favorite is when the shells open insert a teaspoon of garlic, white wine, and lemon juice. Leave on for another 30 or so seconds. then enjoy ..:coolup::coolup::coolup:
