Ceviche con salsa Ponzu

Heres a favorite of mine, hope you like it. Ponzu is a Japanese sauce, great for dipping, and great for ceviche.

For the Ponzu

1 cup soy sauce
3/4 cup lemon juice
1/4 cup rice vinegar
1/2 cup dried bonito flakes
1/4 cup Mirin rice wine
A bit of sugar

For the cevice

Fish of your preference
Tomatoes
Green onions
Avocado
Cilantro
Sesame seeds
Olive oil


Making Ponzu

Bring soy sauce to boil in a pan. Add bonito flakes in the pan and cool it in the fridge. Drain the soy sauce of bonito flakes. Mix soy sauce, vinegar, and lemon juice and mirin and very little sugar to taste.

Making ceviche

You all know how to make it, but i recommend 1/2 inch dice for the fish, the avocado, and the tomato, the rest is better of diced very small. After dicing, mix all the ingredients, and then add the Ponzu sauce, let it rest for 15 minutes in the refrigerator, add sesame seeds on top, and bon apetit.

DO NOT ADD SALT, Ponzu is rather strong and salty, in fact, if you find it too strong, i recommend draining the Ponzu and diluting it with more lemon juice.
