Mexican Brownies

On Boxing day we always make tamales and this brownie recipe. This is more like a cookie than a cake and the cinnamon/chili flavors are a perfect dessert to the tamales. These go really well with Port.


Aaron Sanchez's Mexican Brownies
Ingredients
• 2 sticks of unsalted butter
• 2 cups sugar
• 4 large eggs
• 2 teaspoons vanilla extract
• 2/3 cup unsweetened cocoa powder
• 1 cup all-purpose flour
• 1 teaspoon ground Mexican cinnamon (canela)
• 1/4 teaspoon pequin chili powder or cayenne pepper
• 1/2 teaspoon kosher salt
• 1/2 teaspoon baking power

Directions

Preheat oven to 350; line a 9X13 inch baking dish with parchment paper, leaving an overhang on two sides. Press the paper into the corners of the pan and lightly grease with butter.

Melt two sticks of butter in a nonstick sauce pan over med-low heat; do not boil. Remove from heat and let cool slightly. Add the sugar, eggs and vanilla to the sauce pan and stir with a wooden spoon until combined.

Add the cocoa, flour, cinnamon, chili power, salt and baking powder and mix until smooth. Spread the batter in the pan and bake until a toothpick inserted in the middle comes out fudgy, 20-25 minutes. Cool in the pan on a rack, then use the parchment paper to lift out the brownies before slicing.

Sounds great......now if I can just find someone to bake them for me!

You should probably specify 'Mexican Vanilla', northern brands just don't have the same flavor.

Here today gone tomorrow. Well, I know I did not dream it up cuz I copied the recipe down this morning and just baked it. However, I forgot the vanilla and did not butter the parchment paper. Shame on me.

Love the background heat (cayenne) after eating a bite of its cake like gooey texture. I believe it was Santiago's post or maybe not but it sure is good! It screams for vanilla ice cream.

The reason I jumped on this recipe is for the cocoa (dark chocolate) in it. My lastest diet calls for 1 oz of "unsweetened" dark chocolate per day along with 2 glasses of red wine. However, it did not say how big the glasses are to be.

I fulfilled that requirement yesterday thanks to Santiago. As Mary Poppins once famously said, "A spoonful of sugar makes the medicine go down". Now I'll cut the Mexican brownie up into daily serving sizes to be served with red wine after dinner. The background heat tickles the palette and compliments the wine. This new medicine treatment resulted in a restful sleep.

Thanks Santiago for the easy to bake brownie medicine even though you have been chopped.

wow, this is indeed weird, we just printed out the recipe getting ready to make a batch or two... make sure you have some good port around. By the way, eating a whole batch with a bottle of port, naked in front of the fireplace on a bear skin rug is not to be missed. Or at the kitchen table with your mother in law; either way.

Both actually. My brother-in-law is a 'grower' and he claims to have perfected an Alice B. Tokeless version. This will, of course, negate the necessity of the port.
