This writing is a piece of fiction.
My life did not normalize until I got into catering. Making money and a living was a lot easier as a caterer.
If I had to do the food business all over again, I would own a large food truck and continue the catering.
Now that I am retired life has been so much easier, especially here in Baja.
On edit I am adding a couple of footnotes:
I personally know a large number of chefs from all over the country, and the only ones that have a great personal life are the ones that own one or
two restaurants, and their life got easier when their work was delegated to a trusted person. My knowledge comes from chefs in Los Angeles, Chicago,
New Orleans, Texas, New York, Washington state, San Francisco.
As the Navy Seals would say: "The only easy day was yesterday."
