Otis stuffed avocado....aguacate relleno ensalada de cameron


For the shrimp salad:

1 lb shrimp boiled, deveined, cut into pieces....for medium
shrimp, I cut each shrimp into 3 pieces
Red onion chopped..to taste, I use less than a 1/4 cup
celery chopped..I use two ribs sliced diagonally.
1 tbs mayo
juice of one limon
juice of one passion fruit
salt and pepper to taste
Allow to sit in frig for an hour or so.

Stuff liberally with salad a half avocado person.

Sprinkle cilantro on top....I use at least 2 tbs per serving.

It is beautiful and delicious. If you dont have passion fruit no worrys but it does give a little twang to the salad.

Serves two hungry people. You can also use a whole avocado per person as there is plenty of salad

I do it a little different Judy. The quick lazy way.
No mayo for those who don't use it.

Buds' Avacado Appetizer
Take a large avacado cut in half, remove pit and overfill with fresh pink shrimp. Drizzle Catalina dressing over and a squeeze of lemon. Garnish.

I like your addition of fruit and veg, I'll give it a go. Gracias!

I doubt the mayo is necessary. I sometimes use a little olive oil just to meld the flavors while in the frig. You can also put some cilantro in before the frig
