Anniversary Chimachangas

Yes, 23.

Nuke a small cut up chicken for 10 mins, rotating. Drain off, skin chicken and debone.

Brown it in a little oil. Set aside.
Chop 2 onions,2 bell peppers and a couple large gr chilies, handfull of sliced olives.
Sautee using same pan till onions are clear.
Add chicken and some chile verde salsa. Cook on high for till bubbly and thick.
Spoon generous amount on large tortilla and roll it up. Should be about 1-1/4" dia.

On med high, grill on a flat plate, brown the chimachangas making them brown and crunchy on 4 sides but not charred.

Top with fresh guacamole and garnish with sour cream and cilantro and pico de gallo. Add a dash of Guaqamaya sauce.

Easy guaq: Mash avacados, add chopped tomatoes,a bit of pureed onion and garlic, squeeze of a lime, a little salt and pepper.

Add a huge side of love, respect, compassion and friendship,
a couple kids and viola, a special dish.
