Coctel de Camaron


In order to make this quick and easy I use frozen shrimp and pre-chopped Pico De Gallo. This is guaranteed to be a hit at a party or is perfect for munching on in the sun with a cold cerveza. Great on either side of the border!!

1 lb. peeled and de-veined frozen shrimp
1 7 oz. package Ready-Pac Pico De gallo (found in the produce section)
3/4 cucumber
1 large or 2 small ripe avocados
ketchup
vinegar-based hot sauce such as Tapatio or Cholua
fresh lime juice
salt and pepper
clilantro
Tortilla chips (recommend something on the thicker side) or saltines

Thaw shrimp by running them under cold water. Remove tails and cut into bite size pieces. Peel and chop cucumber and avocado. Add to bowl with pico de gallo. Add hot sauce, ketchup, chopped cilantro, salt and pepper and lime juice starting conservatively and then adjust according to taste.

Chill in fridge for a bit (preferred) or just go for it. Enjoy!!

Sounds great!


These are pre-cooked shrimp, right? You're not using the lime juice to "cook" them...?

The shrimp are indeed pre-cooked, not raw marinated in lime like a ceviche.

Well I could try to make it but you have left out some details. How much ketchup, hot-sauce, cilantro and lime juice do you use?
What size shrimp do you use. Can you be more specific? Pink shrimp(also called Bay Shrimp)is always cooked & typically 180-200 per lb or do you use pre-cooked prawns which can be found in a variety of sizes, graded smallest 51-60 per lb to the largest 6-13 per lb.:lol:. There is a world of difference. ;D

The recipe sounds pretty tasty tho. It is c-cktail but you dip chips in it??
