Baja Chicken Salad


Baja Chicken Salad

6 oz. Chopped meat from a roasted chicken
2 oz. Chopped red onions
2 oz. Chopped, peeled and seeded fire-roasted jalapenos
2-4 tbs. McCormicks’s Mayonesa – “Adereza para tortas” (you can approximate by mixing mayo and Thousand Island dressing)
Squeeze of Lemon juice
Salt
Pepper
One .ripe, medium-sized avocado (Haas is good), chopped

One medium carrot, shaved or grated

Chopped lettuce (Romaine is good)

Combine the first seven ingredients and toss – add the avocado last and gently combine.

Taste! Add more seasoning or acid to balance out the hot, sweet flavors and the oily richness of the mayo and avocado.

Arrange the lettuce in a bowl or on bread (if making a sandwich, more dressing is usually needed on the bread) and layer on the carrot shavings.

Serves four (or two hungry people)
