Breakfast Tortilla Stack


I love to find new ways to use local ingredients. Just made this and it was muy delicioso.


Saute chorizo...enough per person to cover a corn tortilla

Scramble 2 eggs per serving.

Heat 2 tortillas per person.(I like mine crunchy)

Cover one tortilla with the chorizo. Then a layer of thinly sliced tomatoes

Lay next tortilla on top and put the eggs on top of it

Cover with pico de gallo or salsa ranchero or salsa verde

Grate cheese to cover top. I use Jack.

Place under broiler until cheese melts

Slice some avocado and put on top

yummy

There are many variations...you can use ham instead of chorizo.
You can fry the eggs sunny side up so the yellows run all over the stack.
I was thinking about some cheese in the chorizo layer...maybe requeson.

Just had some last night with refried beans, over easy egg and fresh salsa.

Or there's the Mexican Eggs Benny;

Corn tortilla, sliced ham, poached egg and salsa verde !
