Tacos Yaqui (Perrones?)

Eating at Tacos Yaqui cannot be missed (in Rosarito). Their menu doesn't say carne asada (but that's what I ate there). They call the tacos they make "Perrones". Can someone tell me more about this? They are out of this world!

The SAME boiling water that softens the potato hardens the egg. It's about what you are made of NOT the circumstance.
