Very good and easy fish marinade


SWMBO just doesn't eat fish but brought home a slab of salmon last week and told me her doctor said to eat more fish. Came across this recipe from the Barefoot Contessa, of all places, and we just happened to have the 4 ingredients on hand. Outstanding, she ate her share and then looked at my plate and said, "You gonna finish that?" It's that good.

Ingredients:
3 # fish (we have done the obligatory pechuga de pollo, etc. it's all good)
Marinade:
2 tablespoons Dijon mustard
3 tablespoons good soy sauce
6 tablespoons good olive oil
1/2 teaspoon minced garlic

I'm not sure what 'good' is referring to, we used Kikkoman and store label oil. Get over yourself.

1.Whisk the marinade ingredients together and drizzle half on the fish.
2. rest for 10 minutes
3. grill, skin side down and flip when it's ready for whatever meat you are doing.
4. transfer to serving plate and spoon the rest of the marinade on top and rest for 10 minutes.

Oh man, when I first read the title I thought it said fish marmalade.

Your recipe looks good. Does a little pickled jalapeno chile juice fit in there anyplace?
