Bacon wrapped poblanos with shrimp




Stuffed bacon wrapped poblano peppers with shrimp:

6 - 8 good size poblanos,
8 ounces softened cream cheese
8 ounces sour cream
1 cup Mexican blend shredded cheese
1 teaspoon pepper
1 teaspoon garlic powder
12 - 16 pre cooked shrimp, tails off
6 - 8 slices bacon

Blister poblano peppers, place in paper bag and let cool, remove skin. Slice lengthwise in half up to the stem, then remove seeds and veins.

Mix remaining ingredients (except shrimp and bacon) and stuff peppers. Put 2 shrimp into each pepper, close and wrap with bacon slice held in place with toothpicks. Preheat oven to 400 degrees. Line a baking sheet with foil. Place a wire rack on top of foil lined pan. OR If you don't have a wire rack, no problem, just cook on the foil lined pan. Put in oven and bake at 400 degrees for 20-25 minutes or until bacon is crisp.
