The first time we lived in La Paz a friend gave me a rattlesnake he had shot, and I cut it into small chunks, fried them in butter with garlic, then
simmered them in a little white wine--quite delicious! A couple of Mexican pals of my sons Steve and Kelly [then 9 and 11] stopped by--separately--and
we gave them some, telling them it was "desert chicken." When told it was snake, both of them said exactly the same thing, "Can I have a piece to take
home to my dad?"
There was probably some meaningful sociological message in that response, but danged if I know what it was.

A friend skinned it, and I cut it into chunks, fried them in butter with finely chopped onion and minced garlic, then simmered them gently in a little
white wine until the liquid dissolved. Tender, delicious and not greasy at all.
