This will be my first published recipe. :lol:

A light, refreshing gazpacho style seafood appetizer. I feel it would work well with "lime-cooked" seafood substituted so I hope someone will give it a whirl.
This is of substantial size and is quite impressive:


1/3 cucumber diced small
2 stalks celery chopped in food processor but not pureed
2 green onions chopped small
large pinch cilantro chopped
4 oz V-8, Clamato or tomato juice
dash worcestershire
dash Tapatio
dash Guacamaya
dash Tobasco
pinch pepper
pinch celery seed
pinch paprika

stir and gently add seafood:

4oz cooked pink shrimp or cut -up prawns
or:
4 oz cooked crab
or:
4 x-small oysters
or:
4 oz your choice but careful with raw seafoods

Served in a tall parfait glass and garnished on top with a tomato man or a few sprigs fresh cilantro.

I tried it with scallops and it is excellent. we are eating it right now. the scallops have been cooking in lemon juice all afternoon. you posted this at just the right time .
