I don't think I can get past the appetizers on the first visit. I want them all (except I can't have the shrimp-allergic)

A couple questions though...

Where does the Salmon come from? I've never caught any in Bahia.

Is the quail actual Codorniz or Cornish Game Hen?

This is definitely going to take several visits.

And oh yeah, what is Arriero sauce?

1.-The salmon is not from Mexico off course, its Canadian, but i marinated in an old recipe from a fisherman uncle i have in Lopez Mateos, since few people know Lopez Mateos, i tought any bay where Baja fishermen make their living was good enough, and what better than BOLA.

2.-The quail is actual Baja farm raised quail.

3.-Arriero sauce is a dark sauce made from maggi juice, english sauce, demiglace, and roasted serrano peppers.
