The new flavors of Mexico


To work with food in Mexico is a great thing for a guy like me, i get to sample and taste French, Italian, Oriental, and other foreign cuisines and i am always awed about the way in wich each people find ways to mix and cook ingredients to create marvelous combinations that are universally loved by all. Being from Mexico, i am surprised that most Mexicans know very little about their cuisine, specifically, the huge diversity and complexity of it, wich in my opinion, only comes second to Chinese. Talking to a great chef whos a good friend of mine and who comes from southamerica, he mentioned that he found Mexican cuisine amazing, and that he felt a little embarassed about comparing the food from his nation to mine, saying how just one state in Mexico has far more creations than his entire country.

Theres several styles of Mexican food, theres antojitos, callejeros, tradicionales, prehispanicos, barrocos, and more recently, alta cocina style wich is more and more catching up with the world. Just recently, a new crop of Mexican chefs and operators in wich i include myself, have begun to "play" with Mexican food in way never seen before utilizing new techniques and creating new combinations of flavors and textures. From this new exploration of the Mexican culinary universe, some very interesting and fascinating flavors are being created, it would be impossible to describe a flavor in words, but the closest i can come to it is to say that when you are eating these new creations, you definately can taste Mexico in them, in the form of traditional ingredients and herbs and spices, but the combinations of flavors are something that traditionally would come from european or american chefs. Other cuisines are newly born, theres the Baja-med movement that stills has a long way to go, theres a Mex-oriental movement that has some very interesting things, so next time you cme to Mexico, enjoy your Tacos and your Enchiladas, but take time to find a good Mexican restaurant that serves "new" Mexican food, you will find plenty of surprises as so many of the fellow nomads that have tried it know.

Jesse,for those hard to get ethnic foods do you have sources locally or do you "cross-over" ?

Can u give us an example of one of the the Euro-Baja dishes you have developed.

It sounds good...try this: grape leaves stuffed with mexican fried rice, pine nuts and kalamata olives. Drizzled with a flavoured olive oil and sprinkled with roasted chilis.
