Oven Cooked Chicken


On the way home this morning after the San Felipe 250 race I heard two good ways to cook chicken in the oven. It was from a lady on KNX radio out of LA, I think her name is Melinda Lee.

BBQ chicken. Cover the chicken pieces with BBQ sauce in a pan and put into the oven preheated to 350 degrees for 35 minutes. Let set for for an Hour. Drain all the juice in the pan and coat the chicken again with the BBQ sauce. Preheat oven to 450 degrees and cook chicken 10 minutes. This puts the glase on the chicken.

Oven cooked Chicken. She had a name for it but I can't remember what it was. Something like blasted chicken??? Anyway preheat oven to 450 degrees and put a 3 1/2 lb whole chicken in for 45 minutes. Let set for 10 minutes and it's ready to eat. For a 4 1/2 lb chicken add 10 minutes to cooking time.
