Secret Mulege Fish Taco Batter


Ok, the secret is out, someone blabbed it to me. So I'm blabbin' it to you. It may have come from Dannys' tho I can't be sure. Turned out great.

Dry pancake mix prepared with beer and coca cola. Fry till golden brown. Prepare with tradition acrutiments and Mulege tortillas.

The best I've tried.

Judy, this is how we did the cabrilla, and later, triggers we caught.

I think it is 50/50 beer and coke and thin to dipping texture???

sharks Baja is on the right track, but they did not give away there secret ingredients which is the seasoning.

just add the beer to the pancake mix until the bater is the right consistency to coat the fish with a heavy coat. role the fish in corn starch first then the batter. leave out the coke if you want and add only beer, I like it better and it is the way most do it.

seasoning.

salt, pepper, garlic, Finlay cut cilantro to taste.

Pilars in Todos santos uses a similar batter. I could not believe the beer and coke combo but she explained that the coke helped in carmelization of the batter. She added other ingreedients too.

How much coke? I just gave it a good splash. Methinks too much coke would lead to an addiction. Twas delightful!

Always have avocados(guac) on hand.

I like to use triggers.
