Good snack or breakfast muffins


SWMBO cooks these all the time and made a Tex/Mex version today. Thought I'd share it.

Meat Mixture
1 tablespoon oil
1 pound meat (ham, sausage, chorizo, chicken)
1 med onion, chopped (about 1/2 cup)
1/2 cup chicken or veggie broth
1/2 cup frozen peas
1/2 cup frozen corn or carrots
1/2 teaspoon salt
1/4 teaspoon pepper
1/4 teaspoon chili powder
dash cumin
1 cup shredded Cheddar

Baking mixture
1/2 cup Bisquick
1/2 cup milk
2 eggs

Heat oven to 375 degrees. Spray 12 regular sized muffin cups w/ cooking spray
Cook meat in oil; add onion and broth and bring to simmer. Add frozen veggies and seasonings; heat, stirring occasionally until almost all the liquid is absorbed. Cool 5 minutes; stir in cheese.
In a separate bowl whisk baking ingredients until just blended. Spoon 1 scant tablespoon into each baking cup.Top with about 1/4 cup meat mixture. Spoon 1 more tablespoon baking mixture over the meat mixture.
Bake 25 minutes, cool 5 minutes and remove from tins; then cool 10 minutes.
They will be like a muffin and go great with eggs, or just by themselves with coffee. I take these for a mid-morning snack or coffee break. You can freeze these and micro later.

Tell me about micro-ing the frozen ones please. Can you cook them from the frozen state or do they need to be defrosted first?

This recipe appeared in the Kansas City Star food section some years ago. Try this and you'll never buy the boxed Bisquick mix again! ...

Homemade Bisquick Mix

6 cups all-purpose flour
3 tablespoons baking powder
1 tablespoon salt
1 cup vegetable shortening
Directions:

Sift flour, baking powder and salt three times into a large bowl.

Cut in shortening with a pastry blender until mixture resembles fine crumbs.

Store mixture in airtight container in the refrigerator up to 4 months.

Use whenever your recipe calls for "Bisquick mix".

W e get it all the time at Smart and Final on Reforma in Ensenada.
