Carmelized sweet onions with balsamic reduction


This is a great recipe for fish fillets, chicken breasts, pork loin and the like.

Ingredients:
2 teaspoons olive oil
1 large sweet onion halved and sliced
2-3 tablespoons balsamic vinegar
1/4 teaspoon dried thyme leaves
1/2 cup water
2 teaspoons sugar

Heat oil in medium skillet over medium heat. Add the onions and sauté for 2 minutes. Add the balsamic and thyme, sauté for 5 minutes. Add the water, sugar and continue to sauté until the onions absorb the water, about 8-12 minutes.

Serve as a 'smother' for the fish/meat.
