We'll get the 40 text message plan and if anyone has recommendations on what settings, etc. are critical, please let me know!

Thanks!

You can link these up with your Iphone? Will it link with an SE? Is that to download maps and upload tracking?

Yes, you can link to your phone for all the maps, etc.

kevin_in_idaho - That mini looks cool. Definitely, make sure you are comfortable with it and the app before leaving for Baja. I noticed today I can't even sync the InReach and the app via Bluetooth without an Internet connection.

John - There's an iOS and Android Earthmate app. You can download maps for offiline use and connect to the InReach via Bluetooth - https://itunes.apple.com/us/app/earthmate/id519247758?mt=8

When you sync the InReach
1)you are transferring track points from the Inreach device to the Garmin server (cloud)
2)you are updating your contact list to the Inreach device
3)you also will get any updates from Garmin for your Inreach device.
Sync requires an Internet connection, It is not critical for a multi day trip to Sync every day, but eventually your device will fill up and you wont have room for more track points. When that happens the track points from the start of the first trip start to be deleted.
When you finally get an internet connection and sync all the day trips will be together so if you want to have individual tracks you will have to do that after creating a GPX track and editing the combined track into individual tracks. To create a GPX track go to your account on your computer and use the button on the map page. What happens is you are retrieving the track points from your last Sync from the Garmin server to download to your computer.
You need to know how to find the tracks from the server by using my previous instructions.
I do it all the time and it does not take long after a bit of practice.
