getting "pickled"


Not long ago, SpanishDict.com featured the word "encurtido", translating it as "pickled" in English. That was a new one for me, as my grandmothers, from Puerto Rico, always used the phrase "en vinagre", literally "in vinegar", whereas my wife, who doesn't speak Spanish but recognizes food words, has always seen the word "escabechado" when looking through recipes. I'm curious to know what Spanish words others have seen for "pickled" in Baja.

As there are different methods for "pickeling", the adjectives vary. Pickeling can be done using vinegar or a brine that is fermented..... "encurtido" seems to cover both, but Google Translate offers a range of ways of translating "pickle stuff"
