Smoked Sockeye Salmon

Went to Costco in SLO town yesterday where I found wild caught Alaskan Sockeye Salmon fillets for $5.99 USD a pound. Smokin’ up a big batch today after soaking in refrigerated brine overnight. Here’s my recipe if anybody wants to try this:
In a plastic or stainless steel bowl mix the brine solution:
1 pint water
1/4 cup non iodized salt
1/2 cup soy sauce
1 cup apple juice
2 Tbsp black pepper
1 tsp onion powder
1 tsp garlic powder
1 tsp celery salt
1 - 2 tsp cayenne pepper (depending on how spicy you like)
1 tsp liquid smoke
Leave in fridge overnight
Remove from the fridge and lightly run under tap water, place on rack from smoker, skin side down and use a fan to dry for 1 hour until a “pellicle” develops on the meat. Put whole shebang in the smoker (I like to use apple chips, 3 loads). Smoke for 4 + hours until you’re satisfied with moisture content. Serve with Ritz crackers and cream cheese or Artichoke/Jalapeño dip from Costco. ¡Provecho!

Sounds tasty. I agree with letting the fillets glaze over slightly before the smoke is started!

Since I caught and filleted my own fish, I had the option of leavings the pectoral fins on and used them to hang my fillets vertically, and liked the resulting product.

I smoked mine a long time at low temperatures because "kippered" salmon is not what I wanted.
