I have always heard that type of grilling meat referred to as Pastor. As in tacos de pastor. Pretty tasty stuff.

We lucked out last year. Since the elections were the same week as Marde Gras, La Paz had to move the festival to another week. Just the week that
we were going to be there. We certainly could not have gotten a cabana at Los Arcos otherwise.
What a colorful festival. The parade was wonderful with everyone in costumes and masks. Lotsa music, good food. Pretty much everything that Nena's
pictures show.
I highly recommend checking it out.
