Does anyone know the scientific name for callo de acha, the large sea scallops harvested in the Sea of Cortez?
Also, what might a type of fish (sold in fillet cuts) called pechuga de angel (lit., "breast of angel") be in English?

not sure about my source but I've been told that the pechuga de angel is actually shark, and the callo, no se, pero es buena comida

Try a search for callo de hacha, hatchet clam
But I believe the name is Pelacepoda

Our bay was once filled with sweet bay scallops and callo de hacha..hatchets...but no more. The bay scallops are gone and the hatchets have been
severely overharvested ....surprisingly, even more so when prices are down. Incredible waste and poor judgement abounds in Baja. It is embarrassing
to say the least. Now they have to really work for the last remnants.
I know you must mean a different fish fillet, but the 'anglefish' we have locally are 'currently' considered inedible...but time and the quest for the
last fish will tell. Sorry about the negitivity, but sadly it is the truth.

Angel shark. Looks a lot like shovel nose shark or guitar fish but has teeth. Harvested throughout most of Baja's waters.
