This is the perfect time of year for this wonderful drink. Not only is it reputed to be good for you, it is undoubtably the most beautiful glass of liquid you will ever slurp down.

2/3 c. dried hibiscus flowers
4 c. cold water(divided)
1/3 c. sugar

Makes 4 servings. I always double it.

Put flowers and 3 c. cold water in a saucepan and bring to a boil. Continue boiling for 5 mins.
Remove from heat and add remaining c. of water and sugar...stir well.
Allow to steep for at least 4 hours, overnight is better.
Strain into a pitcher and refrigerate
Serve well chilled. I like it over ice.

Yes, in Egypt I was amazed to see the very same drink the Mexicans call Jamaica (ha-my-kah) there... I didn't know the spelling until Kate's post, but it was pronounced 'car-kah-day'.

The hibiscus used is actually the variety 'roselle'. I grew them and brewed the tea many years ago. Lemon grass makes a good tea as well, hot or cold (like lemonaide)!

Simone Limon....Jamaica is our favorite drink here but I just thought I'd add my 2 centavos.....I always add a lime to give it extra zing!

Also, for a change, when you are cooking the Jamica flowers, add a little stick of canela.
