Made some waffles this morning just using a box of Jiffy Corn Muffin Mix, threw in two roasted/seeded Pasilla Chiles and a couple ounces of grated
cheddar cheese--served with a couple eggs over easy--pretty darn good, but will work on the recipe using straight corn mix(or polenta or masa?) since
the Jiffy mix is a little sweet. Could use for pancakes when camping...
