One Half Green Cabbage (fresh picked from a Baja field), cored and finely chopped
Finely chopped White Onion
Grated Carrot
Finely chopped Green Apple
McCormick Mayonesa (Aderezo para Tortas y Sandwiches)
Three or more tbs. of Baja Honey (purchased from a roadside vendor)
Dash of La Costena “Salsa de Chiles Chipotles”
Squeeze of fresh lemon juice
Salt
Pepper
Mix together and taste! Adjust for sweet/tart/savory balance
Good served right away, but is also good when kept in the fridge overnight to meld the flavors.
If serving the next day, TASTE AGAIN! The tartness will increase, so adjust to your preference.

Sounds yummy, we are going to give your apple/honey receipe a try.
Here is our version of it, our receipe varies depending on what is available at the fruiteria or what's left over in our veggie bin:
Mix together in a bowl:
Shredded green cabbage
The meat of a cucumber (no seeds)
Shredded carrot
Chopped celantro
Finely diced Jalepeno
Small amount of graded radish
2 or 3 cloves of fresh graded garlic
Green or red onion, depending on what's at hand
Mix the dressing seperately/ to taste and consistancy:
Mayo
Italian salad dressing
Guacamaya (sp?)
Beer-water
Pepper
Fresh lime juice to taste
Pour dressing over cabbage salad, but not too much as the next day it will all melt together. Refrigerate.
We live off of this during the hot summer, use this for snacks or on tacos, what-ever, kind of a universal treat.

SHOULD be at the BCC by 2PM......and dinner is open. bajablonde and I would be delighted to attend......of course that all depends on the FM-3 process
at the consulate.....but will be there for dinner!!!
