of waves) i go down the beach to dig some big pismo clams. let them sit in a bucket overnight and by lunch the next day they're purged and fresh and
ready for a pico de gallo topping......

Our favorite food in Baja are the Mano de Leon scallops from Guerrero Negro. The picture is from the Malarrimo Restaurant and that particular dish
had pismo clams with them, another favorite.

I agree 100% Ken. They melt in your mouth.
I also love callo de hacha and they sometimes have them too. Although I prefer them raw, Mallirimo makes the best empanesado(sp?) I have ever had.

you may be right! this specimen was from the ensenada fish market to be used for bait since the place we were going had no clams on the beach. the
fishing was poor so my wife came up with an idea! now we dig our pismos and top them off every time!!!
