We are in the beginning of planning stages for a several week trip to Baja.
Mostly in the past we've settled for a week to ten days and so we've used dry ice to keep fresh meat for a week or so.
This trip won't be like that obviously. What hints can the residents provide for buying meat in local markets?
Restaurants will obviously be a part of the plan but a good number of nights camping as well.
Suggestions welcomed.

i buy my fresh meat where the Mexican buy thiers but its hard to tell what cuts your getting they cut it differently some times you can even buy it

Depends a lot of where you're going.
In mulege, we had good luck at Saul's, in Loreto Bartelillos is a favorite with the natives. Just off the highway, on the street next to the brick
liquor/grocery store, there's a little shop that sells great Canadian beef.( hindquarters only it seems ).Ley's in Constitution has good stuff all
around, and of course around La Paz and Cabo it's almost like home, whereever that is.
Machaca

I also buy my beef, pork and chicken at the local tienda. It's often quite good but sometimes it's "not so fresh". The big grocery stores like Ley or
Soriana have good stuff for sure.
Another carne option that I enjoy is machaca de res ( dried, salted, shredded beef ). It stores well and requires no refrigeration. Saute some onions
and chillis, add the machaca and maybe a little water to help rehydrate the beef. The finished product is awesome for burritos. Add the machaca to
scrambled eggs for great breakfast burritos. Good stuff.

Many small stores like Saul's will have individually wrapped frozen steaks.
Make sure it's not freezer burned or full of water - much of it is just fine.
You will also find whole frozen chickens and parts.
If you are going to La Paz or Cabo you will have more choices.
But really, when in Baja.... we eat lots of fresh fish, shrimp, beans, fruits and veggies....empanadas, tacos, and all the new specialties we can find
!
Last time it was garlic Tiger Prawns, to die for !! and Juan's Abalone !!

John M Fresh is much better than dried or canned.
