The local Calimax has a tortilleria factory inside. I don't know how they do it, but every time, no matter what time of day, when I pick up a sealed
pack of fresh tortillas they are still warm.
You have a choice of traditional flour or corn, and, in addition, chipotle or jalapeno flavored flour tortillas. A dozen pack costs appoximately US
$0.65.
All choices of tortillas taste delicious. I often see people standing around waiting for the latest batch to be put out on the counter.
Now, to the quesadilla ingredients.
The Comercial Mexicana in Rosarito has goat cheese from Mexican producers. It is delicious and melts well in a quesadilla. I add in a mint-and-mango

Goat cheese is something that I have never been a fan of. The very first time I tasted it was at a small stand somewhere in the middle of the baja
desert, on a picnic table when I was on a 12th grade mission study school trip in 1978. I was hungry, very hungry and ordered a quesadilla. I hated it
and went hungry until the following day. I never knew where that place was and always wondered. Who pays attention when you're that young?
Years later ( 15 maybe) we chanced to pull off of the highway, into Rancho Santa Inez. The picnic table was there, the window with all the stickers
and then there was Matilda. Instantly visions and memories of that goat cheese quesadilla came flashing into my head.
I will now never forget that special place and that special cheese that made the memory so vivid, and a friend who I can't wait to see the next time I
pass her way.

I love goat cheese. I found some at the local supermarket in La Paz, rolled in a tube and covered in ash (with maybe some ash mold ) just like the French version. It was crumbly and heavenly on a Ritz cracker with a
little sipping tequila on the side.

I love goat cheese, too. Had goat cheest fritatta at a friends just the other night, yumm. Quesadilla with goat cheese - yumm. We have some mango
chutney we just made with friends!! No mint in it, but I bet it will work just fine. I like it with the fresh cow milk cheese we get here on a bagel.
My sister & bro-in-law had goats that just showed up. Once when he was under the hood of the pickup one of the goats jumped from the second story
deck of the house onto the roof of the truck. My bro-in-law nearly had a heart attack!
We keep saying we need a goat right now! The weeds are legendary.

My experience at Mega, which also has a tortilleria in store, is that people buy them as fast as they come off the line so they are always warm. The
other day I order media kilo...27cents. This store has blue corn sometimes.
I like to sprinkle fresh basil or sundried tomatoes or both on the goat cheese. Mexico has some excellent goat cheeses. There is a four pack that is
excellent, four different varieties, one with chives.
Speaking of swooning, I need a Pacifico
