Good fishing down south

Flattened out today. Me and 2 pals, one 15 ft Gregor, 25hp Johnson, lots of hoochies; had a grand day on the water and enough action to make it memorable. Caught and released 3 nice rooster, one small dorado, too many needle fish. Brought home 2 keeper dorado, one nice coconaco, 5 keeper sierra. My pals took the fish, I kept 2 filets for tonight's sierra fish and chips -- yum.

I have, thanks. This guy was pan size and my pal cleaned him to BBQ sin cabeza.

"one nice coconaco" I have found that this is a Pargo...ie...buck teeth fish...
What makes it different ?
Why steak verses fillet:?:
