Having recently discovered this delicious cut of beef in Loreto, I purchased some in La Paz and fried it in a cast iron skillet over high heat. What a
buttery, wonderful flavor! Anyone know about this cut and where (off the cow) does it come from?If you see it on a menu, I suggest you try it out!
