Brown Bachoco Eggs
Rosarito Bacon
Orowheat Buttermilk bread (maybe not made in Baja, but sold here by Bimbo)
Butter
Salt, pepper and a dash of Cajun seasoning
Lightly toast and butter bread.
Cook and season egg(s) sunny side up in bacon fat.
Place eggs and cooked bacon on bread and Enjoy!
P.S. I've tried many kinds of breads, local and U.S.k and I keep coming back to this recipe, again and again.
P.P.S. IMHO (in my humble opinion), I am a cheese lover, but adding cheese to this recipe dulls the flavors.

Any bacon and egg sandwich is improved by a thin spread of honey on the bacon side, and hot mustard on the egg side. Hold the butter-- plenty of
cholesterol here already.

How about a hot honey mustard.Saute a bit of onion, place on top of egg, fried, a slice of jack or swiss,let the cheese melt, season with Spike.Little
bit of mayo on the other side of sammy,and call it Heaven!Gooey and to die for!

These all sound great---drooling on my keyboard.
Here is one we like to make when in Baja----we don't eat a lot of bread there as we are not Bimbo/Wonder fans and that is all that is available----ah,
but lots of good tortillas so this is our
Burrito Huevos Diablo --- or if we use the La Pinta translation---Deviled Egg Young Donkeys
Hard boiled eggs smashed and mixed with
Mayo
Hot Mustard
Little Tabasco
Finely chopped onion
Sometimes a little pickle relish
Salt and Pepper
Heat flour tortillas
Spread on chopped avocado
Add the deviled eggs and roll
Eat with a Negra Modelo and for desert,
bring out the Lipitor and take a long walk

Hmm, never tried pickle relish in my eggy salad, nor onion. Next on my experiment list. Thanks!
