For anyone familiar with Provence, the more rural, less pretentious part of France, any development along those lines in Baja would be very welcome.
It is not the haute cuisine of the Paris region, but the combination of seafood and garden vegetables in season and the delicate flavoring of herbs,
full-bodied wines and slabs of bread, droplets of olive oil glistening on top of stews, soups, and chowders that characterizes the meals of Provence.
Fruits and cheeses for dessert. Brandy and coffee.
I expect it will not immitate Provence but develop its own flavor with native ingredients which would be more interesting.
