This is quick, easy and healthy.
1 whole chicken (about 4 pounds) cut into quarters, or bone-in breasts
2 & 1/2 cups apricot preserves - Smuckers makes the non-sugar.
6 TBSP. red wine vinegar
2 tsp. salt
1 tsp. coarsely ground black pepper
Preheat the oven to 400 degrees F
Arrange chicken, skin side up in deep baking dish.
Mix together above ingrediants, pour over the chicken and bake for 60 minutes.
Serve with steamed broccoli and rice.
