'Res' on menu

What does this mean when it's on the menu - I'm getting different definitions from my language books like "head of cattle" or "animal".

On a menu in Mexico res means beef. On menus in other countries it might be more generalized to simply meat - so the type of meat will probably be specified.

It comes from one of the latin words for "thing" - so it can take on some general meanings. But in general - outside of menus - it refers to some animal that you eat.
