Bajagypsy got me to thinking that it is that time of year again. Anyone care to share baking recipes? Here is my Killer Nut Loaf (Seriously)

Sift together in large bowl:
1 1/2 C flour
1 tsp baking powder
1 1/2 C sugar
1 tsp salt

Add:
1 lb pitted dates
2 lb shelled walnuts (do not chop nuts)
1 lb of your favorite nut, I use macadamia nuts

Drain and Add:
8 oz jar marachino cherries

Stir well coating nuts and fruit with flour mixture.

Add:
5 lg beaten eggs
1 tsp vanilla

Mix thoroughly using hands if necessary.
Spoon into two greased loaf pans and bake in a 300 degree oven for 1 1/2 hours.

Cool completely before slicing.

Yummy, I'm going to try to make that. I think it will on a different day than when I make my Baja Christmas Cake though!:bounce:

Yesterday I made Ana's Killer Nut Loaf. She named it appropriately - it's to die for good. Bakes up as crispy nuts unlike anything I've tasted. Tried it out on my neighbors, who were bold enough to ask for a second mini-loaf.:biggrin:

This recipe is sooooo easy to make. Nothing is chopped - not the nuts nor the dates nor the cherries.... and yes, I thought that would be strange but it's not. I used walnuts and macademias with a cup of pecans tossed in. I think next time I'll skip the pecans and try almonds. But I think this could be made with peanuts and still be delicious.

Get adventurous, give it a try! Makes a great holiday gift.

The only problem is that it screws up one of my favorite jokes I use whenever tasting anything made with nuts. "Could use more nuts."

I do agree that her nut loaf is wonderful, but it could use more nuts.

No...a fruit cake is edible. Linguine's nut loaf is incredible.

Here's another nutty recipe, for little pecan tarts:

1/2 cup butter
1/2 cup sugar
2 egg yolks
1/2 tsp almond extract, or 1 tsp vanilla
2 cups flour

Mix butter and sugar, stir in egg yolks, extract, and flour. Press into tiny muffin pans, and bake at 400 degrees for 8-10 minutes.

Filling:
1/2 cup butter
1/3 cup dark Karo syrup (light is OK if you can't find the dark)
1 cup powdered sugar
1 cup chopped pecans
Bring butter, syrup and sugar to a boil, then stir in nuts.

Spoon into tart shells, return to oven for 5 minutes, reducing temperature to 350 degrees. Cool partially and remove carefully from pans.

Notes on this recipe:

It is supposed to make 4 dozen tarts, but I always come up with fewer...

I always have to adjust the dough a little so it handles well-- by adding a little water or butter or both.

If you don't have a tart tamper, it works well to make the dough into little balls, flatten them in the palm of your hand, then press them into the tins. (If you do have a tart tamper, it works great for mashing guacamole, which goes nicely with the rum-- see next note below)

Although this recipe isn't difficult, it is time consuming, so it is nice to make them with a friend. We've found that if you make those rum balls that have cocoa and crushed vanilla wafers at the same time, you can sample the rum liberally, and the cookies will be done before you know it. Kinda like Bajagypsy's cake.

And if you are making these cookies for BMG, be sure to double the nuts!
