Bike riding Baja- Off road?

Any ideas / reports for running the coasts south on a mountain bike with gear/ Panniers on the dirt roads... West coast: start at San Q'- portage over the big mesa south of San Carlos? - 7 sisters - Wall - GN- etc.
East coast : Start at San Felipe - Bola - then ??

I think sand is going to be your biggest problem. It would/could stop you dead in your tracks.

Plan on not making much progress; and be happy when you do. Carry all the water you can.. then more.

Also just be cautious of other cars and trucks on the road. One main advantage you have off road is you can see an approaching dust cloud/vehicle and be more ready for it.

I'd seriously look into running some extra wide tires and rims if you plan on going down the beach.

The Surly Pugsley comes to mind. I've always wanted to make a nice beach tourer out of it and head down the coast.
