Birria in Ensenada

I just had my first birria at "Guadalajara" in Ensenada. The restaurant was named "Guadalajara" I think... It is located on the street that intersects Lopez Mateo at the McDonalds a few doors down from the Oxxo. It cost 75p for the birria de chivo. I personally enjoyed it but is that a good representation of birria? Could I have done better? If so, where?

You could not have done better anywhere in California or Baja. Birreria Guadalajara is insanely good.

Not sure if it's better, but several of us Nomads went to a restaurant (yep, a "sit down") called El Taco de Huitzilopochtli.
Located at the north end of Ensenada a few blocks east of Reforma. Excellent birria! We tried the goat and the beef and we all decided that we liked the goat best.

I thought I read somewhere that El Taco is only open two days a week.

Birreia Guadalajara is good, but I've had better in Ensenada. It's one of my favorite meals, so I'm always looking for a good bowl of it that goes down real good on a cold day. Most of the little street carts have the best Birriea, but Maniadero has two that are very good. One sits right next to Mari Luisa Market.
But the best I'm now eating is my wife's and she learned how to make it from one of our Mixtecos friends.

I was thinking of the one next to Mari Luisa in Maneadero too. I can't think of it's name, but if I recall correctly, Woody made a post about it a long time ago. The place has changed from just a cart to a sit down place.

It's going to bug me now until I remember the name, or someone posts the answer, which more than likely will happen first!

I would love to add Birria to my Crock Pot items I make while at our place! Also Goat is very low in cholesterol lower that Turkey and Chicken. So... How do you make it?
