So BMG will be doing the cooking for a few weeks, and has a limited repertoire of recipes. In order to speed Lililingilili's recovery we could help
out with some easy, healthy recipes.
I made a great (if I must say so myself) salsa tonight:
1 tart green apple
1 small jicama
1 or 2 limons
3 cebollitas (green onions with large bulb), finely chopped
2 minced serrano chiles-- 1 red if possible
!/4 cup chopped cilantro
1 generous pinch of powdered ginger, or juice of fresh ginger if you have it
pinch of salt
pinch of sugar
Peel and finely dice the apple and jicama. Squeeze 1 limon over it and stir. Add the onion, serranos, cilantro, ginger, salt and sugar. Taste and
adjust lime, salt and sugar as needed.
Serve with grilled fish or with totopos and great big margaritas.
