Yea, You can make mex or any other cornbread, just follow the basic cornbread recipe and throw in anything that tickles your taste buds.

Chile Cheese Corn Bread
1 Cup Creamed Corn
1 Cup Grated Cheese
1/2 Cup Oil
2 eggs
1 Cup Yellow Corn Meal
1/2 tsp salt
1/2 tsp baking soda
1 Cup roasted, seeded, diced anaheim chiles
Mix everything together and bake 350 degree oven 40 minutes.

The lazy way is to buy the cornbread mix in the market and then add all the goodies of your choice.
