Huevos Rancheros

I took a shot at making huevos rancheros last weekend and it turned out pretty good. Here is how.....

2 large tomatoes - diced
1 small sweet onion - diced
8oz of green chiles - diced
cilantro - chopped
corn tortillas
eggs

Saute the onion in oil until soft. Add the tomatoes to the pan and simmer for about 20 minutes. Add the green chiles and season to taste. I used salt, black pepper, red pepper, a little bit of cumin and cayenne. Simmer for 10 minutes and remove from the heat.

In another pan, fry the tortillas until they start to bubble and turn slightly brown around the bubbles. Place in the oven on low heat to keep them warm.

Fry the eggs sunny side up in the tortilla pan.

To serve, take a generous scoop of the veggie mixture to fill the bottom of a plate. Place two tortillas on top of the veggies, and then add two eggs on top of the tortillas. Sprinkle with the chopped cilantro and serve.

Simple and tasty!

Or if you want to skip a step or if you dont like your eggs fried, fix them like Mike McMahan did and put the eggs in the ranchero sauce and poach them. Then move them to the warm tortillas with lotsa sauce.

This dish has always been the benchmark for restaurants for me....well that and beans.

You got it Geoff. I make mine a little diferent as I like them scrambled. I make the sauce, fry the tortillas and plce at least 5 of them on the plate, add the (3) scrambled eggs and pour the sauce on top. "Pura vida".

Three eggs and five fried tortillas? One serving? Maybe you could use some crema or queso, and avocado too. Then dial the equivalent of 911. :P

Poached in the sauce is the best! I'm always disapointed when in a restaurant they ask, "How do you want the eggs cooked?" They used to always be poached, now it is a rare event to get them poached in the sauce.

Huevos Rancheros has been my favorite Mexican breakfast since the earth cooled. I, too, judge the cafe by how well they prepare them.

ken, I agree...Old-Fashioned Poached is my favorite way, hooray! I will be having mine in about 1hr and 12 minutes from now..and counting.

A slight variation is to poach the eggs in pizza sauce. I will let you ponder that for a while....but it's good for a crowd! Forgive me, huevos purists...The Pizza Poach. ;D

Pompano....I have made omelets with pizza sauce before so it sounds good to me! Not for purists...but tasty nonetheless! Huevos Rancheros Italianos?
