TABLE FISH:

I know, I know...some fish (which we will leave unnamed), while truly fun to catch, are not always the best when brought to the table.


But..this baste will make them taste like Chilean Sea Bass served at Antoine's of New Orleans.

And it's so simple, even a Caveman can do it.

Brown sugar, butter,crushed garlic,soy sauce....melt together, cool a bit and brush on your fish. Cook. Eat. Repeat. This ain't rocket science.

These king salmon fillets really didn't need much help, but they came out terrific with this baste. Bon appetite!

This looks good.

My all time favorite:

Butter
Lemon Pepper
Lemon Juice

Melt butter, lemon juice and lemon pepper and spread on cold filets, salmon is great with this. BBQ over mesquite till flesh is just translucent, too much cooking makes fish tough.

For steaks:

Rib Eye Steak (my favorite) or any good cut of steak
Jamaica Mistake with a few drops of balsamic vinegar
Rub marinade on steak before cooking
BBQ over Mesquite
Seven Minutes per side for Med Rare

My family (partially from the Southern US) would say that where there is butter, there is love!

Pompano that looks fabulous. I have only caught one salmon, but would love to get the hubby to go again sometime. Sad thing is I have lived on the Rogue River all of my life and never learned how to fish it. I guess there is always the spring run to look forward to.

I agree with the whole butter thing. Butter can even get the kid to eat broccoli.

I was just saying that the salmon didn't need brown sugar and soy sauce. That's all. The glaze sounds good and I gather from the original post, some fish need that kind of a glaze to make them edible.

But to put that kind of a glaze on salmon???? As a Washingtonian, it pains me to see it. :biggrin: But I wouldn't turn down a serving of it.....;)

24baja, sorry to hear about your one-only salmon experience. Good luck with that spring run..and we would be glad to have you join us on the Umpqua next fall season..say around mid-August to late September. Always have room in the boat for a fishing fan. Just message me here.

The salmon glaze/baste made those king fillets the absolute best ones I have ever ate..hands down. But hey, what do we know?...the lady who gave it to me writes for food network, her husband/grill master was a salmon river guide on the Kenai, and I partnered in 5 drift net salmon boats in Bristol Bay for 3 seasons...eating those damn salmon up there every day for so many months that I could puke up on anyone who said sockeye, chinook, or coho.

Of course...I am much better these days..and rarely hurl on anyone anymore. :rolleyes:
