Lost a Yam Recipe---help

I had a recipe for candied yams that I lost. It was one of the only ones that John liked because it was not too sweet and did not include marshmallows.

It involved cooking the yams and then recooking them in a light syrup that I know included orange juice and nutmeg. It was not overly sweet---

I know that recipe... but I am going to give you one even better!
Choose medium/small size Jewel, or Garnet yams (they are really sweet potatoes) Wash, dry, and place them on a cookie sheet in a 400 degree F oven for two hours. Check them with a fork for doneness, should slide in easily, and you will see sugar droplets all over the skin surface. While cooking, you will have a lot of time to mix a cube of butter with 1/2 cup of Clover honey, to which you have added 1 tsp cinnamon, 1/4tsp nutmeg, and 1T bourbon whiskey. This butter mix should be just cool enough to keep its shape in a serving dish. The well-baked yams, in the skins, are served with a 1 1/2" roll of this great spicy butter. This is better than the peeled, syrupy or marshmellowed dish that most people fix. If you insist on the other one.. peel and slice the yams in either 1/2" rounds, or if you prefer, cut them the other way into 3/4" wedges. Place in a Pyrex deep baking dish. Sprinkle 1/2 cup white sugar, 1 cup brown sugar, 1/2tsp salt, 1tsp vanilla, over the top. Dot the top with up to a cube of butter. If you like Orange, get your zester and sprinkle 1T orange zest on top, too. Cover with foil, put into 400 oven for 1 1/2 hours. Uncover and bake for another 1/2 hour until the syrupy liquid is carameled and thick. Shake whatever spices you like over the top before baking.

I really wish people would come clean about the yam versus sweet potato thing. They are not the same thing. I see supermarkets mislabeling them all the time. And, while yams are a major Thanksgiving treat, sweet potatotes actually are much more nutritious.
