dizzyspots - 12-13-2009 at 09:56 AM

Can anyone tell me where to find/buy the fish taco frying discs? Kinda looks like and upside down hupcap...cooking oil in the center, then a outside "lip" to drain the cooked pieces..an internet search found pics, but no sources???

Isn't it just a wok?

Who is to say a Mexican taco shop wouldn't use an inverted hubcap as a wok? Tacos el Buick.

I've seen them in the larger ferreterias (sp).

DENNIS - 12-13-2009 at 11:18 AM

Diver said it. The larger hardware stores. It's a bit different than a Wok. Along with the deep, hot oil part in the center, there's a flat surface above and around that for putting the cooked product to dry or sit and wait for a hungry customer.
I've never seen one that wasn't stainless steel. Don't know how much they cost.

Search google for cooking disc. Lots of info on them.

Try This-

http://mifiesta.com/km01022.html

and a blog with links-
http://chowhound.chow.com/topics/581634

donjulio's looks like a wok without the draining area.

The mifiesta link shows one dish which has the deep frying area below and a draining ring around the outside, which sounds like what you are looking for, and also the inverted version of the above dish, where the center dome rises above the outer ring.

looks like a cool thing!

ANOTHER BETTER SITE!-
http://www.texastastes.com/p869.htm

they have both the "innie" and "outie" version of the comal pan you are looking for.

Scroll down on the texastastes link to see the pans.

edit for-
texastastes 22.5" comal staineless steel $70
mifiesta 20" steel comal $36 (shows a pic of a dark/black pan so I'm guessing cast iron or similar, not stainless)

pps- WELCOME!

Sounds like you have spent a lot of time (as I have) waiting for them to be served. Making me hungry just reading this thread...

I think all the boiling lard would run out through the hole in the bottom.

Agricultural disk from tractor pulled multiple disking rig. They are of very good steel and distribute the heat better than the "improved" variety. That's what they all used to be. Mine is. They welded a patch over the center hole and ground it smooth. For a long time I never saw any other kind.

shari - 12-14-2009 at 10:05 AM

I think those tractor discs are what they origially used and still do.
This is our disca in action yesterday...i got it in vizcaino at a hardware store.

You can fry the fish or chicken or whatever in a skillet or pan on the stove but there is something about it being cooked in a disk that takes it from just being food to being a gastronomical experience. Funny how that works.

Had one just like it years ago, horse shoes welded to it for handles. It was our camping skillet and I really enjoyed cooking with it over a fire.

Learned to use pot holders on the handles the first time I used it:lol::lol:....dt

I found the comal on kitchenfantasy, (not an easy search, btw...)

and it looks like a really great piece at a great price!

I had to laugh at the description-
"This page contains some large stainless steel outdoor cookware including a Cazo and Comal. Please note these items are designed for high output outdoor cooking. They are not designed to look pretty."

:lol::lol::lol:

do you want something that looks pretty or something that actually works! Love It!

The modified tractor disc with the horseshoe handles sounds like it would make baja fish tacos taste even better. Would make a great conversation piece and I'll bet the price is much more favorable.

dianaji - 12-15-2009 at 07:21 AM

they may have one at Great News in Pacific Beach and their prices are great!
