Black Bean and Corn Salsa
3 cans Black Beans, 15 oz, drained
1 can whole kernel Corn 15 oz, drained
2 Roma tomatoes- diced *see notes (or if you like bell peppers, substitute a small red bell pepper)
1 small Purple Onion- diced
½ bunch Cilantro- washed, chopped
3-4 cloves Garlic- minced
2 Jalapeno- seeded, minced
¼ cup lime juice
1 Tbsp Tomato Paste *see notes
1 tsp salt
1 tsp cumin
1 tsp chili powder
Mix everything together in a large bowl, flavor will get better if it sits a couple hours or overnight. ENJOY~~~
Yield- 8 cups (enough for a party! Invite the neighbors....... [that's MSWord for ]
NOTES-
Briefly rinse tomatoes under hot water to remove any wax or oils that may have been put on the tomatoes to prevent mold growth during shipping.
Tomato Paste is available in re-closable tubes. Just squeeze out what you need, keep the rest in the fridge for later. Look for it in the tomato
sauce/paste section of the grocery store.
This is a super-easy recipe! We made it recently in BajaNuts0.5's 5th grade class. We had a Ball! We also made a fresh pico de gallo salsa.
All the kids ate both salsas. We had about 20 cups of salsas for 10 kids, and it was ALL EATEN! The best part for me was when a couple of the kids
said that they used to not like salsa, but now they do.
We had extra chili powder there and some of my superhot ghost pepper hot sauce and .....it's kinda interesting, but......most of the boys put extra
chili powder and hot sauce on their salsas, but the girls.....not into the hot stuff.
Anyway, it's an easy, colorful yummy recipe.
I also have a black bean recipe that is made with pressure-cookered black beans, but that makes about 4 gallons! I'm happy to share, just u2u!

love black beans, and this recipe looks just great.. and been finding that adding the lime to salsa really adds something different .. while turning
down the heat a bit.. thanks it's a keeper in my book.. i'm getting hungry just reading ..

Just being a cranky old member with high blood pressure, but, if you shop around, you can find the beans and the corn w/o the added salt. Always
seemed to me that what with all the added spices, who would miss the salt? Recipe sounds great and I'm gonna give it a go this week.
