May your New year be filled with trips to the Fantastic Sea of Cortez, The Sunsets of Baja, The People of Baja!!

I will deicate this day to an old Friend who would take me to a Bagel and Lox place every Xmas Eve in Beverley Hills Calif.
Klaus, and escapee of the Holocast who was my Partner, and taught me so much! I salute you on this day.!

I just closed the door as my friend/worker left, leaving me with a bag of probably twenty hot Tamales and a package of Buñuelos. His wife is the most best cook I know.
Anyway, the thought brought tears of appreciation to my eyes.
It is a Merry Christmas.

My first (non-dirt) job was working as a dishwasher in a small Mom-n-Pop cafe that employed a Scandinavian cook who would make lefse for our Christmas party. Oh, it was GOOOOD!

I also have a handwritten copy of Flossie's eggnog on an original Axelson's Cafe order ticket...........[can't upload anything now as we lost the camera adapter thingy]... Just getting a little nostalgic......

Pompano, any chance of sharing that lefsa recipe? I've googled it and of course, there are lot's of versions. It's nice to use one that's tried-and-true.

Probably 'Nate n Al'... They're OK. Langer's has the BEST Pastrami! The #1 all-round deli in the LA area is Brent's in Northridge.


OK... What's a Cadillac Lox n Bagel?

BTW, Canter's isn't what it was 30 years ago. IMO, not worth the trip. Instead, go up to the Farmers Market. There's a guy there who bakes his own Jewish rye and makes a killer corned beef sandwich.

Best Pastrami and corned beef in Los Angeles area in my opinion is Langers.

On Sunday, the best place for Lox or smoked BBQ Cod , bagels, cream cheese and onion (red of course) by far and away is at my house, relaxing after the work week. I prefer by far to buy the ingredients at the deli, bring it home and nosh away to my hearts content while reading the Sunday newspaper. Oh yeah, must wash it down with fresh sqeezed OJ. Afterwords water the plants, take the dog for a walk and then a siesta.

I have not done the above for a long, long time but after writing this and thinking about it, you can bet your last peso that this will happen this Sunday.

OK, my Cadillac bagel was the result of not buying lox from Costco for a time (because it would go bad before we could eat it all) and being too cheap to buy the small packs of Lasco or whatever lox. So, we came up with a vegetarian bagel. It has:

fresh chopped garlic (about a half clove per bagel half)
thin sliced cucumber
thin sliced (down the axis, of course) red onion
sun-dried tomatoes in oil, chopped and drained a bit
cream cheese
capers

Smush the garlic, SDTs and capers gently with the CC and spread. Next the onions, so they stick to the CC. Now finish with the cuc; I cut the thin slices into quarters so they dont fall off the bagel as easily when you bite into it. Top with freshly ground black pepper.

Now, the Cadillac Bagel has the above ingredients in the same order. Only cover all that with a layer of lox. I then top the lox with the black pepper and usually put a few drops of fresh lemon juice over the top. The lox on top tends to hold all the incredients in place as you bite.

Sometimes I add fresh or dried dill as well to the blend.

VERY IMPORTANT: GRILLING THE BAGELS, NOT TOASTING THEM!! I coat the inner halves of the bagels with a very light coating of mayonnaise and put them on a hot cast iron skillet and put a grill press on top of them. This flattens them a little and gives the whole bagel a nice crunch each time you bite. I go for a rather dark brown finish on the bagel for good crunch. Let the bagels cool for a few minutes after grilling and the CC mix will spread much easier. The bagel surface almost develops a glaze.

FORGET THE MIRACLE WHIP HERE, DAVE. IT JUST DOESN'T BROWN UP AS WELL. It burns. I guess that's what plastic does. :lol:

And that's the Cadillac Bagel around our house. :bounce:

It was Langer's for me, too. Cantor's wasnt that good the last time I went about 10 years ago. But we'd go just to watch the old Jewish women kibbitz with the deli counter guy about thinness of the corn beef slices and whether he had used one waxed paper slice or TWO; and they weren't paying for the weight of TWO, mind you.

Cantors was one place. Then there was a very small Deli in Beverly Hils run by one little old Lady.
Being a Country boy I had never been subject to Lox and Bagels until Then,

The packaged Lox does not last but WOW I found The Bagel Place in Amarillo. It is busy every moring of the Week, and makes about 19 different types of Bagels and I found that they Fly In their Lox!!

$7.50 for a Giant Bagel Split with both sides covered with Cream Cheese, Capers Lox and of Course Red Onions.

It is amazing for the Texas Panhandle, as we donot get good Fresh Lobster.
However we do have a good Shrimp place.{Texas Gulf Shrimp}

All you good Folks are appreciated on this beautifull Christmas Day.

When down in Florida Miami area there was a place called Wolfie's it was owned by a guy named wolf cohen. Went there last month and it is gone so was the food.Can not find any in Mulege, but in Rosarito on the free road great place called La Bamba,some time they have good Lox. From Costco,or Sams Club.

Costco and Mega are now carrying a brand of lox that comes in 4 individual, vacuum sealed packs. Maybe 5-6 oz each. So, we are back to the Caddies once again!!!

They are fantastic!! I could not beleive it when I had my first one. Large Bagesl of any type, split and Toasted or Grilled--Your Choice , loaded with excellent Cream Cheese, Capers, Escellent Los and Red Onion.

I Started eating Bagels and Lox in Beverly Hills, then later in New york a couple of times, then whe I lived at Swquim washington I would drive all the Way to Seattle!!

Surprised me too but these Begals and Lox here in Amarillo are as good as I have Had!!It show as it is always crowded. Sometimes a Rack of Lamb will show up at Sam's

But now try to find good Lamb, No way! It is even difficukt to find in the largest Market.[[Everybody has been trained as Beef Eaters}

Skeet- If you want to find lamb, look for neighborhoods populated by folks from the Mediterranean area. We've got an Arab supermarket nearby and lamb is abundant there. I even buy ground lamb there, which is very versatile.

I am going to look at Austin the next time I go South. Might find one there.

The property in and around the Texas Panhandle is by an large still owned by the original Ranch Families, all the way back to the King Ranch, XIT, and Turkey Track.
The largest Family Bank in the States is located here, owned by the orginial Family WARE.

It is very different, If you get a chance you should come visit,. Lots of Churches and Church Schools, Great Football {Hi School} Beef Cattle and Oil and Gas Our unemployment is 5,5%,
Still lots of Cowboys working Day Work for $100 Over 90,000 Horses within 90 miles.
And of course we have the 2nd Largest{Deepest} canyon about 5 miles from my house {Palo Duro State Park{

But we still have what you may think are people that are a little Backward.

Good Place to live! When you are not in BAJA.

Skeet- My only experience with the TX panhandle was driving through on RT 66. But, I'll take your word on it.
