Simpleton Blackened Pinto Bass

'Spotted cabrilla'..the basic table fish of Baja. Wide spread & easily caught by anglers, this fish is very popular throughout Baja Sur.

Last night a few of us enjoyed a dinner of this tasty fish done on the barbeque in aluminum foil. It was DELICIOUS and I'm hungry for more already!:yes:



Pretty simple recipe: Just gill and gut the fish, leaving it in the round..you know, skin on with head and tail attached.




Before wrapping in heavy duty foil, stuff your Pinto with your favorites herbs and spices, sliced onions, a little garlic, a little of this - a little of that, brush the fish with some extra virgin olive oil...and you're good to go.

That's really all there is to it..and it comes out great. This ain't rocket science, folks..just simply good food.

Done this foil way, the finished product will be moist, yet firm, and the succulent flavors via the encased spices and stuffings will make your guests think you're a gourmet chef.

To serve, merely remove the foiled fish to a large platter and cut away the top half of foil. Looks very good if you lay some fresh, green romaine leaves on the platter first and surround by lime/lemon wedges.


Remember, you'll have to grill enough to feed your beach pooch when he/she comes around.

Yumm! Works great on fresh trout as well, for those of us stuck inland.

I`m impressed with the delicious fish but wonder............... who is the mystery women? Does co-pilot (AKA First Mate) have a twin :) ?

Hola, damn ! i just ate and i'm really full and now, i'm really hungry again. i love the tin foil fish either on the bbq or grill and sealed and comes out so moist and so full of the flavor of all the spices and herbs.
