FISH FILET LESSONS

The other day an old Mulege friend fileted our catch of pintos and dorado at his table next to the Mulege River boat ramp. Ordinarily, I'd do this myself, but Rafael's a good hombre and needs all the cash he can muster to buy whatever keeps him in such a happy mood. He's good at fileting..and quick. It's his rice bowl...he's industrious. Support him if you can.

Here's a photo tutorial of how to filet dorado and pinto. Some marine critters, like triggerfish, Humboldt squid, smelt & lutefisk require a different approach - to be covered at a later date. You probably have your own methods, but the following will work on 'most' fish you catch.

Nice tutorial, Pompano--I'm taking notes. Funny, but when I do this, one side of the fillet always looks like it has been hacked with a hatchet.

Roger, I have always called him Pipio, not sure if I have the spelling right. You are correct, he is very good and very fast. Also a excellent fisherman jigging with iron. I'll be down in about a week. Jim

Thanks for the info.;) Been filleting and skinning 'em every since I can remember:biggrin:Rafeal is a good guy.;) Fresh fish etc.

This guy wasted the huevera which IMO is the best part of a Dorado. Fish fillet the best when iced well.
